Hopefully, this page is helpful to you if you are seeking to plan a meal or try a new recipe.

Recipes

Breakfasts / Breads

A complete breakfast has the main dish (pancakes or something like that), fruit, and a drink.  If you are doing eggs, then muffins, scones, biscuits, or toast goes with it.  Along with eggs, you can also do hashbrowns, bacon, or sausage. 

- Pancakes/Waffles - serves about 10 people

4 eggs

4 cups buttermilk

4 TBS melted butter

(If doing waffles) 2 tsp. vanilla

***Mix***

            4 cups flour

            4 tsp. baking powder

            2 tsp. baking soda

            2 tsp. salt

            2-4 TBS sugar

***Mix***

 

- Blintzes (or Crepes) - serves about 4

 

2 eggs

1 cup milk

½ teaspoon salt

1 cup flour

2 tablespoons melted butter

2 tablespoons sugar

 

Cook like pancakes, using a ¼ or 1/3 cup for each blintz.  The only difference is to spread each one out to make it thinner and about to the size of a small frying pan.  (On our griddle, only 2 blintzes fit at a time- you can also cook in a frying pan.)   

 

Blintzes (or Crepes) – Quadrupled - serves about 12-19 people

 

8 eggs

4 cups milk

2 teaspoons salt

4 cups flour

8 tablespoons melted butter (a whole cube)

8 tablespoons sugar

 

- Baking Powder Biscuits (or "Buttermilk Biscuits) - makes about 1 dozen biscuits

Mix the following ingredients together:
1/4 c. sugar
3 c. flour
2 TBS baking powder
1 tsp. salt
Cut in 1 cube softened butter.

Mix in the rest of these ingredients:
1/2 c. milk
1/2 c. buttermilk
1/3 c. sour cream

Pat out on floured board.  Cut out with glass.

Bake 450. F. for 10 min.

- Blueberry muffins

1 to 1 1/2 cups blueberries
1 1/3 cups flour
1/2 tsp. baking soda
1/4 cup butter
3/4 cup sugar
2 eggs
1 tsp. vanilla
3/4 cup sour cream

Sift together flour and baking soda; set aside.  Beat butter and sugar together until fluffy.  Beat in eggs and vanilla.  Alternately fold in flour mixture and sour cream.  Fold in blueberries.

Oven Temperature: 450 degrees F.
Time: 15 min.
Makes: 1 dozen

- Banana Date Bran Muffins

___________________________________

½ cup boiling hot water

1 ½ cups wheat bran

 

Blend together and let sit for 5 minutes to soften bran.

1 egg

¼ cup honey (OR ½ cup sugar)

¾ cup buttermilk

1 banana, mashed

½ cup date dices or chopped dates    

 

Blend together thoroughly in large mixing bowl.

1 ¼ cups whole wheat flour

1 ¼ teaspoons baking soda

¼ teaspoon salt

½ cup chopped walnuts

 

Blend together in separate bowl.

Stir softened bran into liquid ingredients.

 

Blend dry ingredients into liquid ingredients just until mixed.

 

Fill muffin cups almost full.

 

Bake @ 350’ F. for 20-25 minutes.

 
Cool 5 minutes before removing muffins from pan

 

 

 

- French Toast

 

- Banana Chocolate Chip Muffins

 

1 c. butter, softened
2 c. sugar

---Cream together

4 eggs

6 mashed bananas

4 c. flour

1 tsp. salt

2 tsp. baking soda

2 tsp. vanilla

2 c. chocolate chips

---Mix

Bake @ 350 degrees F. for 25 minutes  Makes 2 dozen normal sized muffins

 

- Bread I have put instructions for stirring it by hand or using a mixer.

2 TBS yeast

3 TBS sugar

2 3/4 c. warm water

---stir, let sit 10 min.

 

Add: 3 c. flour

4 TBS melted butter

2 tsp. salt

---If you're using a mixer: mix 2 minutes on low level

    If you're stirring by hand: stir 200 times

---Slowly add flour up to five more cups, [switch to dough hook (if using a mixer) when it gets thick].

 

---Once thick:  Mixer: Knead with dough hook 5 min.

                     By hand:  stir for 10 minutes

---Let rise 1 hour (covered)

 

---Punch down dough and seperate into two equal chunks.  Grease two 1.5 quart loaf pans and place one chunk of dough in each pan.  Cover; let rise 30 min.  (*Note: now is a good time to turn on the oven to let it have enough time to preheat.)

 

---Bake @ 350 degrees F. for 30 minutes

*Note: If you let it rise too long while it is in the pans, the bread might fall.*

 

Lunches
 

Lunches can have more than just sandwiches.  They can also have fruit or vegetables (if you do vegetables, then fresh with dip is good).

 

- Macaroni and Cheese - serves about 10 people

Melt 4 TBS butter in sauce pan.
Add
4 TBS flour and stir.
Gradully add 2 cups of milk (will be like a thick paste at first).  Cook until it is a little thicker.
Add about 4 cups of cheddar cheese (you may use other kinds of cheese if you like).  Once the cheese is melted, add about a teaspoon of garlic powder and 2 tsp. of cellery seed.

Pour over top of elbow macaroni and serve.  *To cook elbow macaroni, see the Cook Your Food section.*

- Peanut Butter and Jelly Sandwich

- Tuna Sandwich

- Turkey/Cranberry/Cream cheese Sandwich
Spread cream cheese over bread; spread jellied cranberry sauce over the other slice of bread and place turkey in between to make the sandwich.

- Leftovers from a previous dinner

- Burritoes (see dinner section)

- Salad (see dinner section)

Dinners

- Spaghetti Sauce

 

-4 cans (8 ounces each) Tomato Sauce (we use 2 16 ounce cans)

-1 TB olive oil

-3 TB brown sugar

-2 TB instant chopped onions

-½ tsp. whole dried oregano

-¼ tsp. garlic powder

 

Mix all the ingredients together in a pan, over medium heat, with 2 pounds of hamburger meat (cook the meat in the pan first).  Put over spaghetti noodles or elbow macaroni.  Serves about 10 people

 

- Tartar Sauce

Mix the following together in a bowl:

1 cup mayonnaise
2 TBS minced onions
3 TBS relish

(The tartar sauce goes with fish sticks and french fries.)  Serves about 8 people
 

- Salad - Do any or all of the following:

  • lettuce leaves, torn up into bite sized pieces (make sure the lettuce is rinsed before you use it)
  • meat (optional): chicken or taco meat
  • tomatoes, cut up
  • olives, sliced
  • sunflower seeds (without the shells)
  • shredded cheese
  • sour cream or salad dressing
  • croutons
  • salsa
  • any other things that you can think of

 
- Burritos or Tacos

Use any of the ingredients listed in the salad recipe above.

Put the ingredients you have chosen on tortillas and wrap them up.  Or, you can use taco shells.  One more ingredient to add if you want is refried beans.

- Meat Loaf
Mix the following in a bowl (with your hands):

2 lbs. hamburger (raw), softened all the way
2 eggs
2 c. oatmeal
1/4 c. ketchup
2 TBS. dried onions
1/2 c. milk

Put the mixture in two 1.5 quart* bread pans (you do not have to grease the pan first) and bake at 350 degrees F. for 1 1/2 hours.  Serves about 10 people 

*Although the mixture could fit in a bigger pan, we do not do it that way because in that size of pan, the meat doesn't cook all the way in the middle.

- Sour Cream Potatoes

6 large potatoes, peeled, boiled, and cubed
2 c. sour cream
1 1/2 c. shredded cheddar cheese
cooked diced ham

Mix together in bowl.  Salt and pepper to taste.  Serves about 10 people.

Desserts

- Chocolate Cake without a mix - all by scratch

- Chocolate Chip Cookies

2 cups butter, softened
1 1/2 cup brown sugar
1 cup sugar
----cream together

Add:
4 tsp. vanilla
2 eggs
----beat

Add:
4 1/2 cups flour
2 tsp. baking soda
1 tsp. salt
4 cups chocolate chips
----mix

Oven Temperature: 375 degrees F.
Baking Time: 10-15 minutes
Makes 5-6 dozen


- Chocolate Pudding

- Blackberry Cobbler
Mix-
8 cups fresh blackberries
2 cups sugar
Spread in bottom of 9x13 pan. 

Mix in bowl with pastry blender:
2 sticks of butter, softened
2 cups flour

Add and mix:
1 cup sugar
4 tsp. baking powder
1 cup milk
dash salt

Put over blackberries.  Bake @ 375 degrees F. for 30 minutes.

- Applesauce Cake

Mix the following in large bowl:
-1/2 cup butter, softened
-2 cups sugar
-1 egg
-1 1/2 cups applesauce
-2 1/2 cups flour
-1/2 cup chopped walnuts or pecans (optional)
-1/2 tsp. salt
-1/2 tsp. cinnamon
-1/2 tsp. cloves
-1/2 tsp. nutmeg
-2 tsp. baking soda
-1/2 cup water

Pour into greased 9x13 in. baking pan.
Bake @ 300 degrees F. for 40 minutes
Dust top with powdered sugar (optional)

Yield: 12-16 servings
Serve warm or cold

 

 

 


Fruits

Below is a list of fruits.  Some of them can be served canned, fresh, or dried.  At the end of the list is a five cup fruit salad recipe.

  • Peaches
  • Pears
  • Oranges or orange juice
  • Bananas
  • Pineapple
  • Apricots
  • Cherries
  • Prunes
  • Blueberries
  • Strawberries
  • Apples
  • Watermelon, cantalope, and honey-dew
  • Five Cup Salad- Mix in a bowl one cup of each of the following: canned pineapple chunks, canned mandrin oranges, coconut, mini marshmellows, and sour cream.

 

Vegetables

As with the fruits above, the following list of vegetables can be served more than one way: fresh (with dip ), boiled (rinse off the fresh vegetable and then boil on stove in sauce pan), and canned that has been heated up (either on stove or in microwave).

  • Cauliflower
  • Broccoli
  • Peas
  • Carrots
  • Corn
  • Green beans or wax beans (or mix them together)
  • Beets
  • Spinach

 

 

 

 

 

Cook Your Food

To cook noodles:
You will need 1/2 of noodles for every person that will be eating.  Doing a few extra servings is a good idea.

Put water in a sauce pan and boil.  You will have to estimate how much water to do (just eye-ball it).  See how much noodles you have and then just make sure you have enough water in the pot to completely cover all the noodles.  Once the water is boiling, add the noodles and boil for 10 minutes.  Make sure you stir the noodles right after you put them in or else they will stick to the bottom of the pan.  Stirring several more times throughout the cooking time is a good idea also so that the noodles won't stick together (this is especially true of spaghetti).

How to make mashed potatoes:

Rinse the potatoes, peel them, and then rinse them again.  Cut them up into chunks and put in a sauce pan.  Fill the sauce pan with water until it covers the potato chunks.  Put over medium heat on the stove.  Boil for 7 minutes.
